This recipe was modified from Maya Krampf’s The Wholesome Yum Easy Keto cookbook (see link). Your cookbook is filled with many beautiful photos and recipes for those of you who are on a keto diet. If you look at Amazon, she has a 5-star rating from everyone who bought her book. Since keto is usually high in fat, I modified this recipe to contain fewer calories and fat. By simply swapping the Kielbasa for Turkish Kielbasa and using less (I used a whole pack), I was able to get it up and running easily. And Kielbasa offers a nice change from the usual chicken and beef proteins. I hope you like it as much as we do.

Kielbasa Veggie Sheet Pan Dinner is prepared in a pan with turkey keel basa, asparagus, tomatoes, and peppers. It is also keto, Whole30, low carb and gluten-free.
14 Ounces Kielbasa Cut on the diagonal in 1/2 inch thick slices 1 pound asparagus cut, cut into 2 inch pieces (3 cups) 1 1/2 cups 8 oz grape tomatoes, halved 1 large orange peppers cut into 2-inch pieces (1 1/2 cups) 2 tablespoons olive oil 1 teaspoons sea salt 1 teaspoon Italian Spice 1 Coffee Spoon Paprika 1/2 Teaspoon Garlic Powder 1/4 Teaspoon Black Pepper
Preheat the oven to 400 ° F. Line a 20 × 14-inch baking sheet or two 14 × 10-inch pans with foil and fat.
Arrange the Kielbasa in a single layer on the baking sheet. Roast for 12 to 15 minutes until the bottom turns brown.
In the meantime, stir the vegetables together in a large bowl.
Whisk the oil in a small bowl. Sea salt, Italian spices, peppers, garlic powder, and black pepper. Pour over the vegetables and throw them to cover.
When the Kielbasa is ready, remove the pan from the oven, but leave it on. Turn the Kielbasa pieces over and slide them to one side of the pan, leaving room for the vegetables.
Arrange the vegetables on the other side of the extra-large pan or on one level with the second pan if two pans are used.
 Roast 18 to 20 minutes until the vegetables are tender and the Kielbasa is further browned.
